Fighting grocery inflation with creative leftover recipes
Is inflation relentlessly attacking your wallet? That's the sensation I experience every time I go grocery shopping. Fortunately, I've discovered a way to fight back. The best defence is a good offence—specifically, an offence involving leftover patties!

The rising cost of groceries has placed significant pressure on many of our savings in recent years. Although there's currently a pause in the inflationary trend, every shopping trip reminds us that the days of cheap prices are over. So, what can we do? We need to learn to adapt to this new reality.
One way I adapt to this less-than-ideal situation is by making leftover patties. Made from leftover rice from the previous day's dinner, these patties are far from bland; they also help save a bit of money and eliminate the habit of wasting food. Are you throwing away vegetables? With this recipe, that won't happen again.
The recipe is, naturally, incredibly simple. Keep in mind that leftover patties aren't restricted to the ingredients listed below. In addition to rice, onions, and carrots, you can also use stale bread rolls, leftover potatoes, and even deli meats. The only limit is our imagination!
Leftover rice patties
Ingredients:
- cooked rice,
- a few carrots,
- 1 onion,
- 1 clove of garlic,
- 1 egg,
- parsley,
- salt,
- pepper,
- 1 tablespoon of butter,
- flour for breading,
- vegetable oil for frying.
Preparation:
- Transfer the rice from yesterday's dinner into a bowl. If it's very dry, add a small amount of water and heat it in the microwave.
- Peel and grate the carrots. You can also use vegetables that have already been cooked. For example, cooked carrots from a broth work perfectly. Mash them with a fork and add them to the rice.
- Next, add a peeled, finely chopped and sautéed onion in butter.
- Add chopped parsley and garlic pushed through a press to the mixture.
- Season to taste with salt and pepper, and finally, add the egg. Mix everything thoroughly.
- Form patties from the prepared mixture. Bread them in flour (alternatively, you can use breadcrumbs) and fry them on each side in hot oil. Done!
