Delight in minutes: Apricot and peanut puff pastry rolls recipe

Puff pastry frequently appears on my shopping list. It is a versatile base for many sweet and savoury snacks. In this recipe, it becomes the foundation for delectable rolls with apricots. Between the flaky, crispy pastry lies a simple yet delicious peanut filling.
Apricot rolls with peanut filling
While it may seem that everything has been said about puff pastry, you can still surprise someone with a new recipe. One of my quick dessert staples is simple rolls, where a fruity note from apricot jam enhances the sweet taste of the pastry and filling.
When they appear on the table, be quick – they vanish quickly. Children love them, and adults adore them. They are perfect for a sweet treat.
Ingredients:
- 1 puff pastry sheet
- 6 teaspoons of apricot jam
- 1 egg
- Almond flakes
- Apricots
Peanut filling:
- 9 ounces of salted peanuts
- 3 fl oz of milk
- 0.7 ounces of icing sugar
Preparation method:
Step 1: Grind the salted peanuts in a food processor and transfer them to a bowl. Add milk and icing sugar, and mix thoroughly.
Step 2: Unroll the puff pastry sheet on the counter and spread the prepared peanut mixture.
Step 3: Fold the puff pastry in half and cut it into long strips. Twist each strip and then roll it into a spiral.
Step 4: Place the rolls on a baking tray lined with parchment paper. Use a spoon to make an indentation in the centre, which you fill with apricot jam. Brush the edges of the pastry with a beaten egg and sprinkle with almond flakes. Place in the oven preheated to 200°C (390°F) and bake for 15 minutes.
Step 5: Transfer the ready rolls onto a plate, adding pieces of fresh apricots. You can also decorate them with a mint leaf or sprinkle them with icing sugar. Enjoy!
