The spicy aroma and slightly sweet and sour taste make these fluffy pancakes irresistibly moreish. Such dishes are a splendid way to welcome autumn, as they warm you up, cheer you up, and envelop you in a cosy, fluffy blanket. Grab this recipe and let the autumn blues pass you by.

When we talk about flavours and aromas associated with autumn, this dish indeed makes it into my personal top 3. Perfect for breakfast, dessert, dinner, a quick snack for work, or a hurried meal when time is short. Let plum pancakes make themselves at home in your kitchen, and you will be rewarded with smiles all around.

Quick plum pancakes. An autumn hit

We love pancakes, and these beautifully risen ones, almost resembling doughnuts, are our pride and joy. However, we don’t always have the time to prepare yeast dough for pancakes, so we take shortcuts and simply use bicarbonate of soda or baking powder instead. The effect isn’t quite the same, but these cute, crispy small pancakes have also found a cherished spot in our kitchens.

These quick little pancakes are exactly what I love to prepare in autumn, when it’s grey outside, and my plate is filled with warmth and rich colours. Warming soups, aromatic meats, and desserts wrapped in a blanket of spicy aromas are exactly what most of us need in autumn to stave off those sneaky autumn blues. That’s why delicious plum pancakes, featuring a fruit that fits wonderfully into autumnal fare, are a perfect start to the day or an even better end to it. And making them is a breeze.

Plum pancakes. Recipe

Ingredients:              

  • 8 plums,
  • 150 grams of plain flour,
  • 1 tablespoon of sugar,
  • 1/2 teaspoon of bicarbonate of soda,
  • 175 millilitres of milk,
  • 1 egg,
  • canola oil or clarified butter for frying,
  • icing sugar, cinnamon, and sour cream for serving.

Preparation:        

  1. Wash the plums thoroughly and dry them, then remove the stones and cut the fruit into not-too-thick slices.
  2. Sift the flour, add sugar and bicarbonate of soda. Mix everything together.
  3. Add milk and egg. Whisk the ingredients until you get a smooth batter. Finally, add the plums and mix everything again.
  4. Fry the pancakes in hot oil or butter on both sides until golden. Remember to gently stir the batter each time you scoop it with a spoon.
  5. Serve the plum pancakes with icing sugar mixed with cinnamon and a dollop of sour cream.
