Chocolate skyr cake is a dessert that combines simplicity of preparation with extraordinary taste. It's ready in 15 minutes, and the result will impress even the fussiest guests. Flourless, light, and fluffy, it's perfect for a November table.

Why choose skyr?

Skyr, Icelandic yoghurt, has exceptional nutritional properties. It is high in protein while low in fat and lactose, making skyr cake delicious and healthy. Most importantly, it is extremely versatile and works wonderfully in sweet bakes.

Chocolate skyr cake – a quick dessert recipe

The list of ingredients for skyr cake is short, and the combination of ingredients makes the cake both light and satisfying.

Ingredients:

  • Approximately 900 grams of natural skyr
  • 4 eggs
  • 100 grams of sugar
  • 1 packet of vanilla pudding
  • Berry fruits for decoration (e.g., blueberries, raspberries)

Preparation:

  1. Combine the ingredients: Place the skyr, eggs, sugar, and pudding in a bowl. Mix everything together until smooth.
  2. Prepare the dish: Line a baking dish with parchment paper.
  3. Bake: Pour the mixture into the dish and even out the surface. Sprinkle with berry fruits. Place in an oven preheated to 170°C and bake for about an hour until the top is golden.

Variations on the skyr cake

You can modify the basic skyr cake recipe to fit your preferences. Instead of cocoa, you can add other flavours like cinnamon, cardamom, or vanilla extract. Berry fruits can be replaced with other favourite fruits, such as peaches, apricots, or plums. You can also add crushed nuts or grated chocolate to the cake.
