Button mushrooms are fungi that, despite their commonality and easy availability, often do not excite culinary enthusiasts. However, the right approach to their preparation can make them taste and smell more like noble wild mushrooms. In this article, we will discover how with a few simple tricks and well-chosen spices, button mushrooms can become a delicious and aromatic base for many dishes.

Secrets to sautéing button mushrooms

The key to obtaining juicy and aromatic mushrooms is the proper sautéing technique.

  • Slice thickness: Thicker slices of button mushrooms better retain their firmness during sautéing.
  • Heated fat: Before placing button mushrooms in the pan, ensure the fat is well heated. This way, the mushrooms will brown quickly and won't release too much water.
  • Evaporate water: To make the mushrooms crispy, it's worth evaporating the water that is released during sautéing. This can be done by cooking them over higher heat or by transferring them briefly to a colander.
