Once upon a time, banana breads were all the craze, and it's no wonder, as bananas are a fantastic ingredient for many cakes and desserts. They add sweetness and moisture, and when combined with cinnamon and a touch of peanut butter, they transform into a delightful autumn treat. This cake makes a perfect alternative to a doughnut for school or work.

Banana cinnamon cake

This cake could confidently be called an autumn brownie - it's moist, bursting with flavour, and so delicious that it's hard to stop eating. The banana and cinnamon mixture is topped with icing and a hint of caramel sauce. Such a dessert will quickly elevate your mood, even on the dullest of days.

The riper the bananas, the sweeter the cake will be. All you need is one bowl, a few ingredients, and some baking time to enjoy this dessert.

Ingredients:

  • 3 bananas
  • 4 oz brown sugar
  • 2 oz vegetable oil 
  • 1 teaspoon vanilla extract 
  • 3 tablespoons peanut butter 
  • 1 teaspoon cinnamon 
  • 7 oz plain flour 
  • 1 teaspoon baking powder
  • crumb topping

Icing: 

  • 4 oz butter
  • 4 oz icing sugar

Method:

Step 1: Peel the bananas, place them in a bowl, and mash with a fork. Add the brown sugar, vanilla extract, peanut butter, and vegetable oil, and mix together.

Step 2: Add the cinnamon, plain flour, and baking powder, and mix until combined. Pour the mixture into a baking tin lined with baking paper. Sprinkle with the crumb topping. Bake in an oven preheated to 320°F for 30 minutes.

Step 3: Meanwhile, blend the softened butter with the icing sugar. Spread this mixture over the cooled cake and drizzle with caramel sauce. Enjoy!
