  • Dried thyme

How to prepare:

  1. Peel the potatoes, wash, dry, and cut into quarters. Transfer to a bowl.
  2. Combine the olive oil with a pinch of salt (be cautious; the bacon adds plenty of saltiness), pepper, and dried thyme. Drizzle this mixture over the potatoes and toss well to coat.
  3. Cut the bacon strips lengthwise. Wrap each potato quarter with a bacon slice.
  4. Line a baking tray with parchment paper and arrange the potatoes neatly alongside each other.
  5. Preheat the oven to about 190 degrees Celsius and bake for around 45 minutes. Depending on the size of your potatoes, cooking times may vary—so it's a good idea to check with a fork after 40 minutes to ensure they are soft inside. Enjoy!
