How to prepare ricotta and apple pancakes?

Ricotta pancakes do not require complicated ingredients or lengthy preparation time, making them an ideal recipe for a quick yet delicious dish. To achieve perfect pancakes, it's worthwhile to start by combining liquid ingredients, such as buttermilk, egg, and ricotta cheese, with dry ingredients, including flour, baking powder, and cinnamon. This approach ensures a uniform batter consistency and helps the pancakes to cook evenly.

Ingredients:

  • 2 apples (preferably a sweet, crunchy variety like Gala),
  • 1 egg,
  • 240 ml buttermilk,
  • 250 g ricotta cheese,
  • 1 tablespoon sugar,
  • 1 teaspoon vanilla extract,
  • 95 g all-purpose flour,
  • 1 teaspoon baking powder,
  • 1/4 teaspoon baking soda,
  • 1/2 teaspoon cinnamon,
  • 85 g butter,
  • 85 ml oil.

Preparation:

  1. Prepare the batter: In a bowl, mix the egg, buttermilk, ricotta, sugar, and vanilla extract. Add sifted flour, baking powder, baking soda, and cinnamon. Mix until combined.
  2. Apples: Peel the apples, remove the cores, and slice them into pieces about 5 mm thick.
  3. Frying: Heat butter and oil in a pan. Place a few apple slices in the pan, then spoon portions of the batter on top. Fry on both sides until golden brown.
