Before you grab the phone to order sweet and sour chicken or a pizza from a nearby pizzeria, check out this recipe for an accordion tortilla casserole.
Accordion tortilla casserole
Tortillas are a very versatile kitchen product, and it's good to have a pack on hand. They can be transformed into wraps or burritos and a simple casserole with cheese and ham under a creamy sauce. The preparation is quick, and the dish deserves the title of comfort food.
Comfort food, which offers consolation, refers to dishes that bring back pleasant memories, improve mood, and provide a sense of security. The casserole with tortillas fits perfectly into this category, enveloping hungry tummies in a cheesy blanket after a long day.
Ingredients:
- 225 g smoked ham,
- 3 eggs,
- 225 g sour cream (18%),
- 80 ml chopped parsley,
- 1.25 ml black pepper,
- 2.5 ml salt,
- 140 g shredded yellow cheese,
- 6 whole grain or wheat tortillas.
Instructions:
Step 1. Dice the smoked ham. You can also use other favourite deli meats, such as poultry or soppressata.
Step 2. In a large bowl, beat the eggs. Add the sour cream and chopped parsley, and season with salt and pepper. Mix well, then add the shredded cheese and diced ham, stirring to combine.
Step 3. Fold the tortillas in an accordion style and place them in an ovenproof dish greased with oil, approximately 20 x 30 cm. Pour the prepared egg mixture with cheese and ham over the tortillas.
Step 4. Bake the prepared casserole in an oven preheated to 170°C for about 20 minutes. When the cheese is temptingly gooey, divide it into servings and serve warm. Enjoy!
