Crunchy wafer rolls with cream filling are the taste of my family's evenings. My aunt loves to bake them. I still love their taste today and enjoy making them at home. This recipe works every time—it has been circulating in my family for years, and friends always ask for the recipe after trying the rolls.
Wafer rolls with cream - proven recipe
Delicious, crunchy wafer rolls with a delicate cream filling are a simple way to impress guests at any party, especially a birthday. This recipe is a must-have for sweet lovers.
When they appear on the table, everyone immediately starts eating. I don't know anyone who stops at just one, so it's worth making a generous portion for family gatherings. A pudding cream would also work well instead of cream made with heavy cream and mascarpone.
Ingredients:
Dough:
- 250g of all-purpose flour,
- 225g of cold butter,
- 225g of Greek yoghurt,
- A pinch of salt,
- 1 egg,
- Sugar for sprinkling.
Cream:
- 600ml of heavy cream (30%),
- 300g of mascarpone,
- 6 tablespoons of powdered sugar.
Instructions:
Step 1. Sift the all-purpose flour onto a counter. Add salt and pieces of cold butter and knead the dough, adding Greek yoghurt in the process. Wrap in plastic wrap and place in the refrigerator for 30 minutes.
Step 2. After this time, roll out the dough and cut it into long strips. Wrap each strip around a mould for wafer rolls.
Step 3. Place the moulds with the dough on a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle with sugar. Place in an oven preheated to 200°C for 15 minutes.
Step 4. Beat the chilled heavy cream with powdered sugar, adding the mascarpone a spoonful at a time at the end. Transfer to a piping bag and fill the cooled rolls.
Step 5. Place the finished rolls on a large plate and serve to your guests. Enjoy!
