Combining orzo pasta, tuna, and vegetables will delight everyone. It's a tasty alternative to the somewhat overdone Greek or vegetable salads.
Tuna and orzo pasta salad
Orzo pasta is a type of pasta that resembles rice grains in shape. While it can be added to soups, it works best in salads, particularly in this one, which includes filling canned tuna and cherry tomatoes.
The salad with orzo, tuna, and cherry tomatoes is healthy, light, and nutritious. Instead of heavy dressings, olive oil is used. It's perfect for dinner, will be a hit at parties, and when taken to work, will make your colleagues at the next desk envious.
Ingredients:
- 150 grams of orzo pasta,
- 10 cherry tomatoes,
- 1 tablespoon of olive oil,
- 1/4 teaspoon of salt,
- 2 tablespoons of chopped parsley,
- 1/2 lemon,
- 1 small red onion,
- 1 can of tuna in its own juice,
- Salt and pepper to taste.
How to prepare:
- Cook the orzo pasta according to the package instructions. After cooking, drain it thoroughly.
- In a small bowl, mix the olive oil with the chopped parsley, salt, pepper, and the juice squeezed from half a lemon. For additional aroma, you can also add grated lemon zest and a small clove of garlic pressed through a garlic press.
- Cut the cherry tomatoes in half.
- Peel and finely chop the onion.
- Drain the tuna and flake it with a fork.
- Add the prepared dressing, cherry tomatoes, onion, and flaked tuna to the bowl with the cooked pasta.
- Gently mix everything together so that the ingredients are well combined.
You can serve the salad immediately after preparation or chill it in the refrigerator. Enjoy!
