Summer salad sensation: A refreshing dish of corn and avocado
In the summer, we are more inclined to reach for lighter dishes. It's an excellent opportunity to explore new flavours and combinations and to indulge in summer salads. This recipe is one of my favourites.

A corn, tomatoes, and avocado salad is perfect for a light snack or lunch. It also wonderfully complements grilled dishes. It's a delightful way to incorporate more vegetables into your daily diet. When grilled pork neck appears on the table, everyone forgets about it and immediately reaches for the salad bowl. On hot days, I often have it instead of dinner when I have no appetite for anything heavy and meaty.
Summer salad with corn and avocado
This dish is the highlight of the party and a refreshing snack in one. It's sweet, thanks to the fragrant summer tomatoes and corn. The onion adds crunch, cilantro, and lime, bringing freshness, and the delicious avocado completes the dish. It's the flavour of summer wrapped in a tasty salad.
Ingredients:
- 1 boiled corncob
- 115 grams of cherry tomatoes
- 1 red onion
- juice of 1 lime
- 1 avocado
- salt and pepper to taste
- fresh cilantro
Directions:
Step 1. Wash the tomatoes and cut them in half. Add sliced red onion and boiled corn. Squeeze the lime juice and add it to the mixture.
Step 2. Add the diced avocado and fresh cilantro leaves. Season the entire dish with salt and pepper to taste, and mix well. The salad is now ready. Enjoy your meal!
