It is best to choose an organic lemon that has not been waxed. Remember to always scald the fruit if you're using the peel.

Ingredients:

  • 3 large eggs
  • 1 cup sweetened condensed milk
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • Optional: lemon glaze (1 cup powdered sugar and 1-2 tablespoons lemon juice)

Preparation:

  1. In a large bowl, beat the eggs with the condensed milk.
  2. Scald the lemon with boiling water.
  3. Add flour, baking powder, lemon juice and zest. Mix until well combined.
  4. Pour the mixture into a pan lined with parchment paper. A small loaf tin works best.
  5. Bake at 170°C for about 45 minutes, until a toothpick comes out clean.
  6. Once the cake has cooled, prepare the glaze from powdered sugar and lemon juice. Drizzle it over the cake.
