Sesame twist transforms classic pork chops into crunchy delight

Do you love pork chops? You probably haven't prepared them like this before. A small change in the breading preparation can make them crunchier and enhance their flavour, all thanks to a tiny seed.

We know the breading recipe for pork chops by heart. Many chefs assert that it is as important as the meat itself, influencing both the taste and appearance of the chops. Thanks to it, they remain juicy.

Changes in the breading

The basic ingredients for the breading are eggs, flour, and breadcrumbs. Here's a twist: simply add sesame seeds to the breadcrumbs, which have a slightly sweet, nutty flavour. They complement the meat beautifully and are often found in Asian cuisine. Sesame seeds also offer valuable nutrients such as protein, healthy fats, B vitamins, and minerals including iron and zinc. Additionally, you could incorporate buckwheat flour which gives the chops a distinctive taste.

Pork chops in sesame breading

Ingredients:

  • 400g pork loin, boneless,
  •   
  • 2 eggs,
  •   
  • 250ml breadcrumbs,
  •   
  • 125ml sesame seeds,
  •   
  • 3 tablespoons wheat flour,
  •   
  • Salt and pepper to taste,
  •   
  • Rapeseed oil for frying.
  • Preparation method:

    1. Prepare the pork loin by cleaning it and cutting it into slices approximately 2cm thick. Then, use a meat mallet to pound them. Season the chops with salt and pepper.
    2. Set up three plates: the first with wheat flour, the second with beaten eggs, and the third with a mixture of breadcrumbs and sesame seeds.
    3. Coat the pounded meat first in the flour, then in the egg, and finally in the breadcrumb-sesame mixture.
    4. Fry the prepared pork chops in well-heated rapeseed oil over medium heat for 4–5 minutes on each side. Please ensure the oil is hot enough before you start frying.
