Chicken Salad - Recipe
Ingredients:
- a large chicken breast,
- 200g of small pasta (e.g., penne, bow ties),
- 1 bell pepper,
- 1 can of canned corn,
- 5 slices of pineapple (fresh or from a can),
- salt,
- pepper,
- oil,
- 2 tablespoons of Greek yogurt,
- 1 tablespoon of mayonnaise,
- 1 teaspoon of curry powder,
- optionally: chives, smoked paprika, cheese pieces, red onion.
Preparation:
- Start by boiling water for the pasta. Add half a teaspoon of salt to it. Once boiling, add the pasta.
- Meanwhile, prepare the chicken. Wash it, pat it dry, and cut it into small pieces. Season with salt and pepper before frying it in a bit of oil.
- Once the pasta is done, drain and place it in a large bowl. Add the chicken, diced bell pepper, pineapple, and drained corn.
- Next, make the sauce. Combine the yogurt, mayonnaise, and curry powder. Add salt and pepper to taste if needed.
- Drizzle the sauce over the ingredients in the bowl and mix well. Serve fresh for the best taste.
