Recipe for salmon casserole
Salmon casserole is an excellent idea for a tasty family dinner. It is prepared relatively quickly and easily. You can happily make a larger portion and reheat it the next day.
Ingredients:
- About 280 grams of fresh salmon (skinless fillet),
- About 450 grams of potatoes,
- 1 onion (diced),
- About 200 millilitres of heavy cream,
- About 100 grams of creamy cheese (e.g., mascarpone or cream cheese),
- 1 tablespoon butter,
- 1 teaspoon lemon juice,
- About 100 grams of grated cheese (e.g., mozzarella, gouda, or cheddar),
- 2 cloves garlic (minced),
- Salt and pepper to taste,
- Fresh dill or parsley for garnish,
- Breadcrumbs for topping (optional).
Preparation:
- Peel and thinly slice the potatoes. Boil in salted water for about 8–10 minutes until soft but not disintegrating. Drain and set aside to cool.
- Cut the salmon fillet into smaller pieces and drizzle with lemon juice. Season with salt and pepper, they are setting aside for a few minutes to allow the flavours to infuse. For a delicate flavour, you can also add a touch of olive oil.
- Heat the butter in a pan, then add the finely chopped onion and garlic. Sauté until golden. Add the cream and creamy cheese (e.g., mascarpone), stirring until smooth and thick—season with salt and pepper to taste. The sauce should be slightly thick and aromatic.
- Layer the potatoes in a greased baking dish, then add the salmon pieces, and pour the creamy sauce over everything. Repeat the layers until all the ingredients are used.
- Sprinkle the top with grated cheese for a golden, crispy crust. For additional crunch, you may also sprinkle with breadcrumbs.
- Place the casserole in an oven preheated to 180°C and bake for 25–30 minutes, until the cheese melts and the top is golden and crispy.
- Remove the casserole from the oven, garnish with fresh dill or parsley, and serve hot. It pairs beautifully with rocket salad or other fresh vegetables.
