Although grilling is usually associated with sausages, blood sausages, and pork necks, a tasty salad is an indispensable part of a get-together. Why not go for an exceptionally tasty bell pepper salad instead of the classic Greek or potato salad? Your guests will be pleasantly surprised.

A simple grilled salad featuring bell peppers, onions, and apples stands out for its wonderful taste. It's all brought together with a generous amount of Polish herbs like dill and parsley, which are most aromatic in spring and summer. People eagerly scoop up a generous serving onto their plates. Since I discovered this recipe, it's the only salad I prepare for barbecue gatherings.

Grilled Salad

Salads are often overlooked at barbecues, with many fearing the array of meats'll overshadow them. Yet, this is no reason to leave them out; vegetables are the perfect complement to the meats, adding vitamins and fibre to the meal. If you're looking to impress and ensure an empty salad bowl by the end of the event, this simple pepper salad is a hit with my family.

Choosing colourful bell peppers for this recipe tastes great and makes the salad look more appealing in the bowl. Sweet pointed peppers are an excellent choice.

Ingredients:

  • 3 bell peppers,
  • 1 small onion,
  • 1 small apple,
  • fresh dill,
  • flat-leaf parsley

Dressing

  • 4 tablespoons of peanut oil or olive oil,
  • 3 heaped tablespoons of elderflower vinegar or apple vinegar,
  • salt and pepper to taste.

How to make:

  1. De-seed the peppers and slice them thinly.
  2. Peel the onion and slice it thinly as well.
  3. Thoroughly wash the apple, and grate it with the skin using the coarse side of the grater.
  4. Roughly chop the dill and flat-leaf parsley before adding them to the mix. Avoid chopping the herbs too finely; larger chunks of parsley are more flavourful.
  5. Combine all dressing ingredients in a glass or small bowl, pour over the chopped veggies, and mix well.

The salad is now ready to serve. It pairs wonderfully with grilled dishes and is also a great choice for a light lunch. Enjoy!
