Casseroles have many advantages. They’re quick to prepare, and there’s practically no cleanup required afterwards. All you need is one, larger dish that can go in the oven. Plus, they’re economical to make.
Classic, but with a twist
Casseroles offer plenty of room for culinary creativity. You can use ingredients that you enjoy, as well as those that are hanging around in the fridge. Cover them with a tasty sauce and bake. It’s an idea for a quick lunch or a warm dinner. If you want the dish to fill, it’s a good idea to base your casserole on potatoes. These vegetables are a staple of Polish cuisine, though typically eaten boiled. Baked, they become flavourful and can be the dish's star rather than just a side.
The other key ingredient in this casserole is chicken, so fans of classic dishes should be pleased. Baked chicken is much lighter than fried chicken, and tomatoes add more flavour and help prevent the meat from drying out. Fresh herbs like basil or rosemary should season the casserole. A pinch of Herbes de Provence will also enhance its taste.
Recipe for chicken casserole
Ingredients:
- 3 large potatoes,
- 1 onion,
- 2 chicken fillets,
- about 200 grams of 30% cream,
- grated yellow cheese to taste,
- 1 tomato,
- 2 eggs,
- 3 cloves of garlic,
- 1 tablespoon of olive oil,
- salt, pepper, sweet paprika, Herbes de Provence,
- sprigs of fresh rosemary or basil.
How to prepare:
- Peel the potatoes and cut them into thin slices; slice the onion. Wash the chicken fillets and cut them into strips. Transfer the meat to a bowl, add oil, minced garlic, and season with pepper, sweet paprika, and Herbes de Provence; mix well.
- Prepare the sauce – beat the eggs with a fork and mix with the cream, season with salt and pepper.
- Grease a baking dish with butter. Layer the ingredients starting with the onion, followed by the potatoes seasoned with salt. Next, arrange the chicken strips. Pour the egg and cream sauce over it, cover the dish, and place it in the oven preheated to 200 degrees C for about 60 minutes.
- After that time, carefully remove the dish, add tomato slices on top of the casserole, sprinkle with grated cheese, and add sprigs of fresh herbs. Bake uncovered for another about 20 minutes.
