In addition to being rich in vitamins A, C, and E, pumpkin has a delicate, slightly sweet taste that complements a variety of spices. Its soft texture after roasting creates pumpkin fries that are crispy on the outside and tender on the inside. It's the perfect choice for those wanting to try something other than the classic potato or sweet potato fries, while also prioritising a healthy and light meal.

Recipe for pumpkin fries

Pumpkin fries are lighter, easy to prepare, and full of nutritional value. They are perfect for a quick meal, snack, or as an addition to main dishes.

Ingredients:

  • 1 small Hokkaido pumpkin (or butternut squash)
  • 2 tablespoons of olive oil
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of dried thyme

Pumpkin fries are a lighter alternative to traditional fries, as pumpkin contains fewer carbohydrates and calories. They are also rich in fibre, which aids digestion and provides many valuable vitamins. Pumpkin's subtle flavour pairs perfectly with spices, allowing for customisation to your taste.

Preparation:

  1. Thoroughly wash the pumpkin. Peel it if using butternut squash; Hokkaido can be baked with the skin. Cut it into sticks about 1 cm thick.
  2. In a bowl, mix the olive oil with the spices: smoked paprika, salt, pepper, and dried thyme.
  3. Add the pumpkin sticks to the bowl and mix thoroughly to ensure all pieces are coated with the spices.
  4. Place the fries on a baking tray lined with parchment paper, making sure the pieces don't touch each other.
  5. Bake in an oven preheated to 200°C for about 20-25 minutes, until the fries are golden and crispy on the edges.

Additional tips:

  • Pumpkin fries taste best when served warm, straight from the oven. You can accompany them with your favourite sauces, such as a garlic yoghurt dip or homemade ketchup.
  • For extra crispiness, consider turning on the convection or grill function in the oven for a few minutes at the end of baking.

Why is it worth eating pumpkin?

Pumpkin is a vegetable worth incorporating into your diet due to its numerous nutritional benefits. It is low in calories but rich in fibre, which aids digestion and helps maintain a healthy weight. Rich in vitamin A, it supports eye health and skin, while vitamin C boosts immunity. Pumpkin also provides antioxidants that protect the body from the harmful effects of free radicals. Owing to its mild taste and versatility, pumpkin serves as an excellent addition to many dishes, from soups to healthy snacks like fries.
