Pistachio Pesto - Simple recipe
Before you start wondering whether and where you can buy pistachio pesto, I'll tell you right away that you can easily make it yourself at home. It resembles classic basil pesto, but instead of pine nuts, salty pistachios are added. It's really simple; you just need to blend the ingredients well. Pistachio pesto works not only as an addition to pasta but also as a sandwich spread, an addition to salads, casseroles, or a delicious dip.
Pasta with pistachio pesto and burrata
This is the perfect recipe for busy people, as the preparation is simple and quick. Pistachio pesto will win over all nut lovers. It cannot do without burrata. Ingredients:
Pistachio pesto
- 70g salted pistachios,
- 2 cloves garlic,
- 30g grated Parmesan cheese,
- juice of 1 lime,
- 150ml olive oil.
Other ingredients:
- 375g spaghetti,
- about 250ml pasta cooking water.
Additions:
- 1 burrata,
- crushed pistachios.
Preparation Method:
Step 1. Grind the pistachios into a fine paste. Add the grated Parmesan, peeled garlic, fresh basil leaves, lime juice, and olive oil. Blend everything into a smooth pesto.
Step 2. Cook the pasta according to the package instructions. Spaghetti or tagliatelle works best here. Do not discard the pasta cooking water.
Step 3. Transfer the cooked pasta to a large pan. Add the water and prepared pesto. Heat everything, stirring the contents of the pan.
Step 4. Place the ready pasta on a plate. Add the burrata and garnish with chopped pistachios. Enjoy!
