Pistachio muffins: A feather-light treat to sweeten your day
Looking for a quick and tasty dessert idea with an interesting twist? Prepare some pistachio-based muffins, and you certainly won't regret it. They are so good that not even a single crumb is left.
Although preparing homemade baked goods can seem like a long and complicated process, we've proved more than once that it doesn't have to be. Of course, plenty of recipes require a lot of time and effort. However, there are also recipes for quick and easy baked goods that delight from the first bite.
A good example here is muffins with a pistachio twist. Not only is their preparation a real piece of cake, but they also taste phenomenal and look beautiful. Moreover, they are fluffy. It's like eating a feather-light cloud. Such an addition to your afternoon coffee or tea is simply ideal. Just amazing!
Ingredients:
- 150 grams of shelled pistachios,
- 200 grams of sugar,
- 240 grams of all-purpose flour,
- 1 teaspoon of baking powder,
- 1/2 teaspoon of baking soda,
- 1/2 teaspoon of salt,
- 1 cup of coconut milk,
- 125ml of vegetable oil,
- 80 grams of Greek yoghurt,
- 1 teaspoon of vanilla extract,
- 1 teaspoon of almond extract.
For the crumble:
- 50 grams of shelled pistachios,
- 3 tablespoons of all-purpose flour,
- 2 tablespoons of sugar,
- 1.5 tablespoons of melted butter.
Additionally:
- homemade icing for drizzling.
How to prepare:
Step 1. I start the recipe by preparing the pistachios. I transfer them to a blender and then finely grind them.
Step 2. I combine Greek yogurt, vegetable oil, coconut milk, vanilla, and almond extracts in a separate bowl and thoroughly mix them using a kitchen whisk.
Step 3. Now, it's time for the dry ingredients. I add the prepared pistachios, flour, sugar, baking powder, baking soda, and salt to another bowl.
Step 4. I then pour the dry mixture directly into the yoghurt-based mix, using the kitchen whisk again to combine the ingredients.
Step 5. Next, I prepare the crumble. To do this, I mix the crumbled pistachios, melted butter, flour, and sugar using a regular kitchen spoon.
Step 6. I then transfer the muffin mixture into small muffin liners. I also sprinkle each muffin with the previously prepared crumble. Only then are the homemade bakes ready to be put into the oven. The device should work for 20 minutes at 180 degrees Celsius.
Step 7. I decorate the ready muffins with homemade icing. And that's it. Enjoy!
