Pickled cauliflower recipe

Ingredients:

Fermented cauliflower

  • 1 cauliflower
  • 1 litre of water
  • a small piece of horseradish root
  • 1 teaspoon of salt
  • 2 cloves of garlic
  • 2 bay leaves
  • 5 peppercorns
  • 3 allspice berries

Preparation:         

  1. Clean the cauliflower and divide it into florets.
  2. Boil the water with salt. Stir the mixture until the salt dissolves. Set aside the brine to cool.
  3. Arrange the cauliflower florets, garlic cloves, horseradish root, and spices in jars.
  4. Pour the cooled brine over everything, making sure the ingredients are submerged in the brine.
  5. Cover the jar with cheesecloth and press down with a plate.
  6. Set everything aside for a few days (you can leave the jar on the kitchen counter). After about 3-4 days, the pickled cauliflower should be ready.
