Deliciously fluffy, as delicate as a cloud, and incredibly soft - no one can resist such a yeast cake. Sprinkle some leftover compote fruits and butter crumble over the top, and you've got the perfect dessert. With this recipe, there's no need to stress over heavy-pound cake, dry pastry, or unrisen dough. The secret lies in getting the ratios right.

Yeast cake with fruit and crumble

The ideal yeast cake rises perfectly in the oven, is fluffy when sliced, and has a delicate flavor. Even though it may appear simple, baking can be intimidating for some. My easy-to-follow recipe will set even the most amateur baker at ease. After all, the key to success lies in the right proportions.

Ingredients:

Leaven:

  • 1 cup of milk,
  • half a block of yeast,
  • 1 tablespoon of wheat flour,
  • 1 tablespoon of sugar.

Dough:

  • 500 grams of wheat flour,
  • 3 eggs,
  • half a cup of sugar,
  • 100 grams of butter,
  • leaven,
  • fruit.

Crumble:

  • half a cup of wheat flour,
  • half a cup of sugar,
  • 100 grams of cold butter.

Method of preparation:

  1. Begin with the leaven. Warm the milk and sugar together in a saucepan.
  2. When it's warm (but not hot), add the crumbled yeast and flour and combine everything well.
  3. Set the leaven aside in a warm spot for 15 minutes. It should at least double in volume.
  4. Whisk the eggs and sugar together to form a smooth mixture.
  5. Melt the butter for the dough in a pot.
  6. Toss the flour into a bowl, along with the egg mix and the leaven, then knead the dough. If the dough is too sticky, add more flour.
  7. Finally, pour in the melted, cooled butter, knead for a moment, and then allow the dough to rise in a warm spot for an hour.
  8. After an hour, transfer the dough onto a 20x30cm tray lined with baking paper.
  9. Arrange the compote fruit on top, making sure to drain them properly. If you wish, you can use fresh fruits as well. Let it rest for 10-15 minutes.
  10. Prepare the crumble by combining all the crumble ingredients in a bowl.
  11. Sprinkle the crumble topping over the yeast cake.
  12. Pop the cake into a preheated oven at 180 degrees Celsius and bake for about 30-35 minutes.
