Ingredients:
- 5 eggs,
- finely chopped chives,
- 1 tablespoon of butter,
- 1 tablespoon of sour cream,
- salt and pepper,
- optional: a handful of mushrooms, one tomato, one onion.
Instructions:
- Crack the eggs on a flat surface and transfer them into a bowl. To prevent shell fragments from ending up in the eggs, do not crack them on the rim of the bowl.
- Season the eggs with salt, pepper, and chives.
- Vigorously whisk the mixture in a clockwise motion with a fork.
- Melt a tablespoon of butter in a frying pan.
- Separate two tablespoons of the egg mixture into a smaller bowl.
- Pour the majority of the mixture into the pan and whisk gently until partially scrambled.
- If the pan gets too hot, remove it from the heat momentarily.
- Near the end of the cooking process, incorporate the remaining egg mixture and a tablespoon of sour cream.
Mix and dish up the scrambled eggs onto a plate. You can serve them with your preferred accompaniments, like bread, bacon, or grilled mushrooms.
