French chef's take on scrambled eggs

Scrambled eggs reign supreme in the breakfast kingdom, adored globally and prepared in countless ways. Renowned French chef Jacques Pépin has recently shared his recipe for flawless scrambled eggs - lusciously creamy and light.

Pépin, famed for his culinary service to President Charles de Gaulle and others, shares his recipes on social media, inspiring thousands of home-cooking enthusiasts. On this occasion, he disclosed the secret to exquisite scrambled eggs, which wow with their silky texture and lightness. He showcases that the right technique, aided by a few simple hacks, can easily morph into the scrambled eggs of your dreams, ideal for breakfast, brunch or a speedy dinner.

Ingredients:

                          
  • 5 eggs,
  • finely chopped chives,
  • 1 tablespoon of butter,
  • 1 tablespoon of sour cream,
  • salt and pepper,
  • optional: a handful of mushrooms, one tomato, one onion.

Instructions:

                                  
  1. Crack the eggs on a flat surface and transfer them into a bowl. To prevent shell fragments from ending up in the eggs, do not crack them on the rim of the bowl.
  2. Season the eggs with salt, pepper, and chives.
  3. Vigorously whisk the mixture in a clockwise motion with a fork.
  4. Melt a tablespoon of butter in a frying pan.
  5. Separate two tablespoons of the egg mixture into a smaller bowl.
  6. Pour the majority of the mixture into the pan and whisk gently until partially scrambled.
  7. If the pan gets too hot, remove it from the heat momentarily.
  8. Near the end of the cooking process, incorporate the remaining egg mixture and a tablespoon of sour cream.

Mix and dish up the scrambled eggs onto a plate. You can serve them with your preferred accompaniments, like bread, bacon, or grilled mushrooms.
