When we think of chicken cutlets, we usually imagine traditional, fried fillets in breadcrumbs. Although they are tasty, they can become a bit monotonous. To surprise your loved ones and elicit delight at the table, it's worth trying something new. Corsair cutlets are not ordinary; they are a culinary masterpiece that will impress everyone.
Recipe for Czech Corsair cutlets
Thanks to the unique combination of ingredients such as yellow cheese, leek, pineapple, and eggs, Corsair cutlets offer a juicy, distinctive flavour. This dish will certainly outshine traditional pork chops and meatballs, introducing a new contender into culinary arenas.
Ingredients:
- 500g chicken breast,
- 400g pineapple slices,
- 200g leek,
- 200g yellow cheese,
- A pinch of salt,
- A pinch of hot paprika,
- A pinch of pepper,
- 30g flour,
- Two eggs,
- 60ml oil.
Preparation:
- Remove the membranes from the chicken breast and cut it into small cubes. Grate the cheese using a large grater. Rinse the leek, dry it, and cut it into rings. Peel fresh pineapple and cut into cubes (if using canned pineapple, drain the syrup and cut).
- Heat 30ml of oil in a pan and sauté the leek over medium heat — cook for 3-4 minutes until soft.
- Place the pineapple, chicken, and grated cheese in a large bowl. Add the sautéed leek, flour, beaten eggs, and spices. Mix thoroughly.
- Heat the remaining oil in a pan. Form cutlets from the mixture and fry them in the hot oil for about 4 minutes over medium heat. Then, cover the pan with a lid and steam the cutlets for another 4 minutes. After that time, uncover the pan and fry the cutlets for another 2-3 minutes until golden brown.
- Drain the ready cutlets of excess fat on a paper towel.
- Alternatively, you can bake the cutlets in an oven preheated to 180°C for 30-35 minutes.
