Recipe for Czech Corsair cutlets

Thanks to the unique combination of ingredients such as yellow cheese, leek, pineapple, and eggs, Corsair cutlets offer a juicy, distinctive flavour. This dish will certainly outshine traditional pork chops and meatballs, introducing a new contender into culinary arenas.

Ingredients:

  • 500g chicken breast,
  • 400g pineapple slices,
  • 200g leek,
  • 200g yellow cheese,
  • A pinch of salt,
  • A pinch of hot paprika,
  • A pinch of pepper,
  • 30g flour,
  • Two eggs,
  • 60ml oil.

Preparation:

  1. Remove the membranes from the chicken breast and cut it into small cubes. Grate the cheese using a large grater. Rinse the leek, dry it, and cut it into rings. Peel fresh pineapple and cut into cubes (if using canned pineapple, drain the syrup and cut).
  2. Heat 30ml of oil in a pan and sauté the leek over medium heat — cook for 3-4 minutes until soft.
  3. Place the pineapple, chicken, and grated cheese in a large bowl. Add the sautéed leek, flour, beaten eggs, and spices. Mix thoroughly.
  4. Heat the remaining oil in a pan. Form cutlets from the mixture and fry them in the hot oil for about 4 minutes over medium heat. Then, cover the pan with a lid and steam the cutlets for another 4 minutes. After that time, uncover the pan and fry the cutlets for another 2-3 minutes until golden brown.
  5. Drain the ready cutlets of excess fat on a paper towel.
  6. Alternatively, you can bake the cutlets in an oven preheated to 180°C for 30-35 minutes.
