Recipe for cake inspired by the molehill

Ingredients:
- 200g of plain flour,
- 100g of sugar,
- 2 eggs,
- 100ml of oil,
- 100ml of milk,
- 3 tablespoons of cocoa powder,
- 1 teaspoon of baking powder,
- 3 bananas,
- 240ml of double cream,
- 1 tablespoon of icing sugar.
Preparation:
- In a bowl, mix the flour, sugar, cocoa, and baking powder. Add the eggs, oil, and milk, then mix thoroughly until smooth.
- Transfer the batter to a baking pan lined with parchment paper and bake at 180°C for about 25–30 minutes or until a toothpick comes out clean.
- After baking, let the cake cool.
- Whip the double cream with icing sugar until stiff.
- Peel and slice the bananas into slices or halves.
- Gently scoop out a small portion of the cooled cake to create a hollow, then fill it with banana slices.
- Top with whipped cream and chocolate, but do not shape it into the characteristic mound, which speeds up dessert preparation.
- Crumble the previously scooped-out cake pieces and sprinkle them on top.
Additional tips:
- for an even moister cake, you can soak it with a bit of coffee or lemon juice before adding the bananas and whipped cream;
- instead of baking a chocolate cake, you can use chocolate biscuits;
- the cake tastes great when served immediately, but if you leave it in the fridge for a few hours, the cream will set better, and the flavours will meld.
