Ingredients for mini doughnuts
We start making mini doughnuts with cream cheese by gathering all the necessary ingredients. Your shopping list should include: 300 grams of pasteurised cream cheese, 300 grams of wheat flour, 3 eggs, 3/4 teaspoon of bicarbonate of soda, 2 tablespoons of apple cider vinegar or 1 tablespoon of spirit, and icing sugar for sprinkling.
How to make mini doughnuts with cream cheese?
Making the dough for mini doughnuts with cream cheese is extremely simple but requires some precision. First, in a bowl, mix pasteurised cream cheese with eggs, gradually adding wheat flour and 3/4 teaspoon of bicarbonate of soda. To prevent excessive oil absorption during frying, add 2 tablespoons of apple cider vinegar or 1 tablespoon of spirit to the dough. Mix everything until a smooth mass is obtained.
How to fry mini doughnuts? When the dough is ready, heat oil in a pot to about 180°C. It's important that the oil has the right temperature because doughnuts thrown into oil that's too cold will absorb too much fat, and in oil that's too hot they may burn on the outside while remaining raw inside.
When the oil reaches the required temperature, scoop portions of the dough with a spoon, form small balls, and put them into the pot. Fry each side for about two minutes, until the doughnuts reach a golden colour. Remember not to put too many doughnuts in at once, as they may stick together during frying.
After frying, remove the doughnuts with a slotted spoon and place them on a paper towel to absorb the excess fat. Finally, sprinkle them with icing sugar to add sweetness.
Mini doughnuts with cream cheese are an excellent way to enjoy traditional flavours in a modern version. Their preparation does not require much time or special skills, making them an ideal treat for any occasion, from family gatherings to Fat Thursday.
