Mini cheesecakes will impress your guests not only with their flavour but also with their appearance. They're delicious and easy to make, making them an excellent choice for all kinds of parties and gatherings. With simple ingredients like cottage cheese, eggs, and sugar, you can create something unique in just a few moments.
Mini cheesecake recipe
We'll start with the crust to make mini cheesecakes, which gives the dessert structure and crunch.
Ingredients for the crust:
- 90 grams of crackers (can be classic butter, whole grain, or gluten-free),
- 40 grams of butter.
Ingredients for the cheesecake filling:
- 500 grams of cottage cheese from a tub, semi-fat double-milled cottage cheese, or quark,
- 100 grams of sugar,
- Zest of ½ lemon,
- 2 eggs,
- ½ package of sugar-free vanilla pudding mix (for 500 millilitres of milk).
Additional decorations (optional):
- A few fresh strawberries,
- Strawberry jam or another fruit-compatible jam,
- Mint leaves.
Prepare the crust:
- Crush the crackers finely (preferably in a food processor or blender).
- Melt the butter and mix it with the crushed crackers.
- Line muffin cups within a muffin tray.
- Spread the cracker-butter mixture at the bottom of the cups and press down.
- Set the tray aside.
Prepare the cheesecake filling:
- Blend the cottage cheese, sugar, lemon zest, eggs, and pudding powder until smooth.
- Spoon the cheesecake filling into the cups.
Bake the mini cheesecakes in a preheated oven for about 25 minutes at 180°C. After baking, turn off the oven and let the cheesecakes cool with the oven door slightly open, then put them in the refrigerator for a few hours to cool completely and set.
We can decorate the finished mini cheesecakes with fresh strawberries, jam, or mint leaves to give them a more appealing look and additional flavour.
