How to prepare coffee cake step by step
- Start by preparing the baking tin (approximately 13 x 25 cm). Line it with damp and crumpled baking parchment to help fit it to the tin.
- Preheat the oven to 170°C (top-bottom function).
- Dissolve the instant coffee or Inka in a small cup of boiling water. Allow it to cool.
- In a large bowl, beat the eggs with sugar into a fluffy, light mixture. This process takes about 6 minutes.
- In a thin stream, pour oil and cooled coffee into the beaten eggs, mixing gently.
- In a separate bowl, combine the flour with baking powder, then gradually add it to the egg mixture, mixing with a spoon or mixer on low speed.
- Pour the prepared batter into the tin and immediately place it in the preheated oven.
- Bake for about 45 minutes. Check with a toothpick – it should be slightly moist but without raw batter.
- After baking, remove the cake from the oven and cool on a rack.
