Making mornings nutritious: The rise of overnight oats
The fast-paced lifestyle means we don't always have time to prepare healthy and nutritious breakfasts. Does that mean we have to give them up? Not at all! Overnight oats, prepared the night before, can nourish the day's first meal.
When I first heard the term "overnight oats" and learned what it was about, I immediately understood that I had discovered something perfect for me. After all, there were many times I neglected my breakfast, quickly grabbing a banana before heading to work or filling up with a nutritionally worthless cheese sandwich. Every time, I knew I was harming my body, but did that awareness suddenly give me more time to prepare a proper breakfast? I'm sure you know the answer to that question.
My search for a solution to this problem began with making a list of quick but nutritious breakfasts. This was when I also came across the — still puzzling — term overnight oats. I was thrilled. Preparing breakfast in the evening, when I have significantly more time than in the morning, seemed like a fantastic idea. I tested a few recipes and finally found my favourite. Today, I want to share it with you!
Overnight oats with skyr and raspberries
Ingredients:
- 40 grams of rolled oats
- sugar or sweetener to taste
- 60 grams of skyr yoghurt
- 70 millilitres of milk
- 1 tablespoon of peanut butter
- pinch of cocoa
- handful of cashews or other nuts
- handful of fresh raspberries
Preparation:
- Place fresh raspberries in a jar. Out of season, you can use frozen ones.
- Combine rolled oats, sugar, cocoa, skyr, milk, and peanut butter in a separate bowl. Mix everything and pour it into the jar with the fruits.
- Put the container in the refrigerator. In the morning, add the cashews—I prefer not to soften them overnight. Done. See, aren’t overnight oats the most Spartan breakfast in the world?
