This recipe is one that anyone can successfully recreate, even if they are just starting on their baking journey. The minimal number of ingredients and quick preparation make it an ideal cake for any occasion.

Recipe for quick lemon cake – perfect for any time

Although lemon cake is associated with an elegant dessert, its preparation is extremely simple. It is based on our usual ingredients, and the baking process does not take much time. The cake's lemony flavour comes from the addition of lemon juice and zest, giving it a refreshing character. The recipe is so easy that we can successfully prepare it for an unexpected visit from guests, and the result will surprise everyone.

Ingredients for lemon cake:

  • 4 eggs,
  • 113 grams of butter,
  • 100 grams of sugar,
  • 2 lemons (juice and zest),
  • 220 grams of plain flour,
  • 1 teaspoon of baking powder.

Ingredients for decoration:

  • 1 lemon,
  • 220 grams of icing sugar.

Preparation:

  1. Prepare the ingredients: All ingredients should be at room temperature.
  2. Whip the egg whites: Beat the egg whites until stiff peaks form.
  3. Combine yolks with butter and sugar: Beat the yolks with softened butter and sugar until fluffy. Add the zest from two lemons and the juice from one lemon.
  4. Add dry ingredients: Mix the flour with baking powder and gradually add to the egg mixture, gently stirring.
  5. Combine with egg whites: Gently fold in the beaten egg whites.
  6. Bake: Pour the batter into a baking tin lined with parchment and bake in a preheated oven at 170°C for about 40 minutes.
  7. Prepare the glaze: Mix the icing sugar with lemon juice for a smooth paste.
  8. Glaze the cake: Pour the glaze over the cooled cake and decorate it with caramelised lemon slices.
