This cake earned the title of the lazy daughter-in-law because of its simplicity in preparation, which can be seen as a compliment. Just toss the ingredients into a bowl, mix, put it in the oven, and arm yourself with a bit of patience.

Lazy daughter-in-law's cake - apple cake recipe

There is no shortage of apples in our country, and the first ones are already appearing on the apple trees. Some of them are worth turning into compotes or jams, and some can be turned into cake. Although apple pie and apple tart are the most popular, the lazy daughter-in-law's cake definitely deserves attention.

Apple cake could just as well be titled resourceful instead of lazy daughter-in-law. The art is to make something delicious while not putting in too much effort and not worrying that something won't turn out right. Even an amateur can handle this recipe, with no fear of underbaked dough or collapse.

Ingredients:

  • 250 grams of all-purpose flour,
  • 1 teaspoon of baking powder,
  • 1/2 teaspoon of baking soda,
  • 75 grams of cocoa powder,
  • 200 grams of sugar,
  • 120 ml of oil,
  • 4 eggs,
  • 3 apples,
  • 1 cup of mixed dried fruits (raisins, nuts, apricots),
  • 1 teaspoon of cinnamon,
  • a pinch of salt.

Instructions:

  1. Peel the apples, remove the cores, and cut them into cubes.
  2. Mix the flour, baking powder, baking soda, cocoa powder, cinnamon, and salt in a bowl.
  3. In another bowl, beat the eggs with the sugar until light and fluffy. Gradually add the oil while still beating.
  4. Gradually add the dry ingredients to the beaten eggs, stirring the mixture.
  5. Add the chopped apples and dried fruits to the batter and mix thoroughly.
  6. Transfer the batter to a baking pan lined with parchment paper.
  7. Bake in a preheated oven at 175°C for about 45-50 minutes or until a toothpick inserted into the centre comes out clean.

You can decorate the finished cake with powdered sugar. Enjoy!
