Goddess Salad — Recipe

Ingredients:

  • a handful of spinach,
  • 2 small cloves of garlic,
  • half a shallot,
  • a handful of cashews,
  • 1 tablespoon of lemon juice,
  • salt,
  • pepper,
  • 4 tablespoons of nutritional yeast flakes,
  • half a small cabbage,
  • a bunch of chives,
  • cucumber.

Preparation:

  1. Put the spinach, shallot, garlic, cashews, lemon juice, salt, pepper, and yeast flakes into a tall bowl. Blend until you have a smooth, creamy mixture.
  2. Finely chop the cabbage.
  3. Dice the cucumber after washing and drying it.
  4. Chop the chives after washing and drying them.
  5. Combine all the vegetables in a bowl and drizzle with the dressing. Mix well to ensure everything is evenly coated.
