Healthy eating: Grilled courgette with feta and herbs steals the show
Salty cheese, aromatic herbs, and my favorite this year—grilled courgette. With just a few ingredients, I can create a delicious dish that will appear in my home many times this summer. I recommend you do the same!
For as long as I can remember, I've had trouble coming up with ideas for a healthy dinner. I wanted dishes that wouldn't burden my stomach or give me heartburn but would taste good. Eventually, I had to accept that ham and ketchup toasts disagreed with my stomach, and I had to take decisive action. The question was: what to prepare? One of the ingredients that caught my interest back then was courgette.
The first choice fell on courgette pancakes. I still like them today, although I must admit that just thinking about finding an alternative to this dish relieved me. I decided to go with the flow: I cut the courgette into rounds, grilled it, and added a few other ingredients. Suddenly, I realised I'd created the perfect dinner and an excellent addition to a family barbecue. I've implemented this composition numerous times and am relieved to say it has been enjoyed by me and other family members.

Grilled courgette with cheese and herbs
Ingredients:
- 1 courgette,
- 200 grams of feta,
- A handful of pine nuts (or others),
- A bunch of parsley,
- A bit of lemon juice,
- Olive oil,
- Dried rosemary,
- Salt, pepper.
Instructions:
- Wash the courgette, then dry it and cut it into medium-thick slices.
- Brush the vegetables with olive oil and season with a bit of salt, pepper, and dried rosemary.
- Grill the courgette prepared this way on a grill pan. Alternatively, you can use an oven: preheat to 175°C and bake for about 20 minutes.
- Finally, drizzle the courgette with lemon juice and sprinkle with feta cheese, chopped parsley, and nuts. It's ready to eat!
