Gluten-free pizza reinvented: Delicious cauliflower crust
The classic pizza is known for its high calorie content. However, it can be prepared in a more diet-friendly version, and additionally, made gluten-free. Such a meal will be considerably lighter. An important ingredient in this recipe is a vegetable that we don't usually associate with this Italian dish.
Pizza is one of the most popular dishes in the world, its fame extending far beyond its native Italy. However, in its classic form, that is, on wheat dough, it might not be suitable for everyone. It is mainly high in calories and contains gluten, which many people aim to avoid.
A lighter version of pizza
In today's world, practically every dish has a lighter alternative, and pizza is no exception. It turns out its dough can be made with a vegetable base. Cauliflower is the star here, and needs to be blended. A few more ingredients are then added to the cauliflower mixture to make the pizza crust.
Such pizza won't harm your diet
The pizza with a vegetable base is notable for its lightness and low glycaemic index. Classic dough contains a significant amount of carbohydrates, whereas the crust made from cauliflower has considerably fewer calories and is easier to digest. This flatbread also provides fibre, B vitamins, and valuable antioxidants that support the body. You can enjoy it even while on a diet, and it’s also suitable for children.
Pizza on a vegetable crust
Ingredients for the crust:
- 1 cauliflower,
- 1 egg,
- 40g mozzarella,
- 2 tablespoons grated Parmesan cheese,
- 1 teaspoon dried oregano,
- salt and pepper to taste,
- 1 teaspoon garlic powder.
Toppings:
- 50ml tomato passata,
- 100g mozzarella,
- a few slices of ham,
- a few mushrooms,
- 1 tomato.
Preparation:
- Cut the cauliflower into small florets, place them in a food processor, and blend until fully crumbled.
- Transfer the cauliflower to a microwave-safe bowl and heat it in the microwave for 4–5 minutes until softened. Alternatively, transfer it to a dry pan and fry over low heat for about 10 minutes, stirring regularly.
- Mix the prepared cauliflower with the egg, grated cheeses, and spices.
- Line a baking tray with parchment paper and place 2–3 tablespoons of dough, then flatten it to create a circle with a diameter of about 10cm.
- Place the pizza crusts into an oven preheated to 220°C and bake for 10–12 minutes.
- Spread a thin layer of tomato passata on each flatbread, add your favourite toppings, and sprinkle with grated mozzarella. Bake for an additional 4 minutes.
- Serve the mini pizzas warm.
