Each of us has our trusted methods for quick and tasty meals. However, you can always find even better solutions that save time and introduce new, unique flavours to the kitchen. The pasta sauce prepared according to this recipe is a perfect example of how you can easily seal the taste of summer in a jar and enjoy it all year.

Recipe for delicious winter spaghetti sauce

Nothing brings more joy than opening a jar full of aromatic pasta sauce when it's wintry outside. Such a sauce is a delicious addition to spaghetti and a great base for various pasta dishes.

Ingredients:

                                                  
  • 3 kg of ripe tomatoes,
  • 2 large onions,
  • 4 cloves of garlic,
  • 2 red peppers,
  • 2 carrots,
  • 2 stalks of celery,
  • 200 ml of olive oil,
  • 2 tablespoons of tomato paste,
  • 1 tablespoon of dried oregano,
  • 1 tablespoon of dried basil,
  • 1 tablespoon of sugar,
  • salt and pepper to taste.

Preparation:

  1. Preparing the vegetables: Blanch the tomatoes, peel them, and cut them into cubes. Chop the onions, garlic, peppers, carrots, and celery into small cubes.
  2. Sautéing the vegetables: Sauté the onions and garlic in heated olive oil. Add the remaining vegetables and sauté for about 10 minutes.
  3. Cooking the sauce: Add the chopped tomatoes, tomato paste, herbs, sugar, salt, and pepper. Cook on low heat for about an hour until the vegetables are soft and the sauce thickens.
  4. Pasteurising: Pour the hot sauce into sterilised jars, seal them, and pasteurise for about 20 minutes.

How to diversify the sauce's flavour?

  • Additions: Add other vegetables to the sauce, such as aubergine, courgette, or squash.
  • Herbs: Experiment with different herbs, like rosemary, thyme, or marjoram.
  • Spiciness: Add chilli or cayenne pepper for those who love spicy flavours.

Store the pasteurised jars of sauce in a cool and dark place. This will ensure that your homemade sauce retains its freshness for many months.
