Broccoli is rich in vitamins (C, K, A), minerals (potassium, calcium, iron), fibre, and antioxidants. Cooked broccoli retains most of its nutritional value and is easier to digest than raw. Additionally, we have healthy eggs, chives, and mayonnaise in this mix.
It's advisable to choose mayonnaise with quality ingredients, preferably those based on eggs and rapeseed oil. You can also use natural or Greek yoghurt to lower the calorie content.
Ingredients:
- 18 oz of broccoli,
- 3 eggs,
- 1 clove of garlic,
- chives,
- 3 tablespoons of mayonnaise,
- 1 tablespoon of natural yoghurt,
- salt and pepper to taste.
Preparation method:
- Divide the broccoli into smaller florets and place them in boiling water. Cook for 2-4 minutes until the vegetable is al dente.
- Cool and mash with a fork.
- Boil the eggs until hard, peel, mash, and add to the broccoli.
- Add mayonnaise, natural yoghurt, and garlic crushed through a press, then season with salt and pepper.
- Mix everything thoroughly.
Serve the delightful broccoli and egg paste on sandwiches, toasts, or in a tortilla. You can also add a serving of tuna or smoked salmon, along with sprouts and tomato, to the sandwich. A healthy and colourful breakfast is ready. Enjoy!
