Cottage cheese cheesecake recipe

Preparing this cheesecake is simple and quick, perfect for spontaneous occasions or a quick weekend dessert. Cottage cheese is easily accessible and doesn't require additional grinding, significantly reducing preparation time. Its delicate structure produces a creamy, light cheesecake that doesn’t collapse after baking.

Ingredients:            

  • 600 grams of cottage cheese,
  • 2 tablespoons of honey,
  • 3 eggs,
  • 3 tablespoons of potato starch.

Preparation:                 

  1. Preheat the oven to 170°C. Blend the cottage cheese until smooth.
  2. Add honey, eggs, and potato starch; mix thoroughly until you achieve a uniform consistency.
  3. Pour the prepared mixture into a springform pan lined with parchment paper (about 20 cm in diameter).
  4. Bake for about 50 minutes until the cheesecake is golden and set. Cool in the oven.
  5. Chill in the refrigerator for at least 2 hours. Serve cold, optionally garnished with fruits or drizzled with honey.
