The Breton crepes, or Galettes Bretonnes, showcase a unique facet of North-Western France's cuisine. Made from buckwheat flour, these crepes often come with fillings that might seem novel to some, including yellow cheese, ham, and even a fried egg! Galettes Bretonnes, Breton-style crepes
Ingredients:
- 200 grams of buckwheat flour
- 1 egg for the batter + 1 egg for the filling,
- A pinch of salt
- 1/2 tablespoon of butter
- 710 millilitres of water
- Ham
- Yellow cheese, cubed
How to prepare:
- Begin by placing the buckwheat flour in a large bowl. Create a well in the centre and add one egg. Include a pinch of salt and 1/2 tablespoon of melted butter.
- Stir with a spoon, gradually drawing the flour into larger circles and adding water until the mixture is blended. Allow it to rest in the refrigerator for about 2 hours. During this time, grate the cheese and slice the ham.
- Heat a pan and fry the crepe on both sides. Crack another egg in the centre of the crepe. Once the egg white begins to set, add grated cheese and ham around it, seasoning with salt and pepper to taste.
- To finish, fold the sides of the crepe towards the centre, forming a square, leaving the egg and fillings exposed. Enjoy your meal!
