And then, this unpretentious yoghurt cake comes to the rescue.

Its preparation is straightforward, and once you take your first bite, you'll understand what we meant by "out-of-this-world softness." It's like taking a trip to the skies for dessert and tasting a fluffy cloud from a children's fairy tale. Far-fetched comparison? You'll change your mind once you finish making this yoghurt cake. The most delicate yogurt cake

Ingredients:

  • 2 cups of all-purpose flour,
  • 1 cup of sugar,
  • 300 grams cottage cheese (about 11 oz),
  • 140 grams plain yogurt (about 5 oz),
  • 110 grams vegetable oil (about 4 oz),
  • 5 eggs,
  • 4 tablespoons confectioners' sugar,
  • 1 teaspoon baking powder,
  • 1/2 teaspoon baking soda,
  • a pinch of salt.

Preparation:

  1. Beat four eggs with sugar and a pinch of salt. The resulting fluffy mixture is now ready for the plain yoghurt. Pour it in carefully, stirring all the while.
  2. Add the vegetable oil to the mixture, followed by the flour, baking powder, and baking soda. Mix well. Pour into a cake pan lined with parchment paper.
  3. Place the cottage cheese in a container and mash it, for example, with a fork. Add one egg and confectioners' sugar and blend it into a smooth mixture. Now pour it onto the cake in the pan and smooth it gently.
  4. Place in an oven preheated to 180°C (350°F) and bake for about 45 minutes. Then cool and sprinkle with confectioners' sugar. Enjoy!
