Under the influence of temperature, the vegetable completely changes its taste and texture. It becomes sweet, salty, and umami.
Umami is known as a "meaty" taste. As the name suggests, it's found in meat and plant products such as soy sauce, dried tomatoes, nuts, mushrooms, or cauliflower. Therefore, this vegetable can prepare juicy cutlets with a distinct meaty flavour. If you use the right spices, it's a great alternative to classic meatballs. Cauliflower cutlets — Recipe
Ingredients:
- a head of cauliflower,
- 100ml of aquafaba* (in the vegetarian version - 1 egg),
- 350g of breadcrumbs,
- 2 dried tomatoes,
- 1 teaspoon of herbal pepper,
- 1 teaspoon of white pepper,
- half a teaspoon of turmeric,
- half a bunch of chopped dill,
- salt,
- pepper,
- oil.
Preparation:
- Wash the cauliflower and cut it into small pieces. Cook it in lightly salted water. After cooking, drain the water and mash the vegetables into a smooth paste.
- Chop the dried tomatoes into small cubes and add them to the cauliflower.
- Add the spices, aquafaba, and breadcrumbs. Mix everything thoroughly.
- Form cutlets from the prepared mixture. Fry them on both sides until they are golden brown. Serve with potatoes and your favourite salad.
*Aquafaba is the water from chickpeas. It's an excellent substitute for eggs. Just add a bit of salt and beat it until stiff. It has a consistency similar to egg whites. It can be used in desserts, cakes, and vegan meringue.
