Winter detox soup - recipe

Ingredients:

  • 1 onion,
  • 2 cloves of garlic,
  • a small piece of fresh ginger (about 2 cm),
  • 1 large carrot,
  • 1 red bell pepper,
  • 236 ml of cauliflower florets,
  • 236 ml of broccoli florets,
  • 236 ml of green peas,
  • 236 ml of cherry tomatoes,
  • 50 g of mushrooms,
  • 30 g of spinach,
  • oil,
  • chili powder,
  • pepper.

Preparation:

  1. Peel the onion and chop it into small cubes. Crush the garlic through a press.
  2. Use a pot with a thick bottom and add a small amount of canola oil. Heat it up and sauté the onion. When it has browned slightly, add the garlic and grated ginger.
  3. Add about 500 ml of water to the pot and then add the carrot. Simmer everything for 15 minutes.
  4. After the allocated time, add the cauliflower, broccoli, cherry tomatoes, spinach, and the diced bell pepper and mushrooms. Continue cooking until all the ingredients soften.
  5. Stir in the pepper and chili towards the end of the cooking process.
