The ultimate coffee cake recipe: moist and fragrant with apples and zucchini

The pairing of apples and zucchini might come as a surprise, but I assure you, you will be captivated by its taste and soft texture. The zucchini ensures it's moist and fluffy, the apples bring in sweetness, the cinnamon adds an interesting twist, and the lemon icing is just the right finishing touch.

Ingredients:

  • 1 small zucchini,
  • 2 large apples,
  • 2 cups of cake flour,
  • 2 eggs,
  • 5 tablespoons of oil,
  • 1 tablespoon of sugar,
  • 120ml of milk,
  • 1 teaspoon of cinnamon,
  • 1 package of vanilla sugar,
  • 1/2 teaspoon of baking powder.

Lemon icing (optional):

  • 100g of powdered sugar,
  • juice from 1/2 a lemon.

Preparation:

  1. Peel the zucchini and grate it on the coarse side of a grater.
  2. Peel the apples and slice them into thin semi-circles. Next, toss them with half the vanilla sugar and cinnamon.
  3. Blend the flour, eggs, milk, oil, baking powder, and sugar in a large mixing bowl.
  4. Press the zucchini to remove its juice and incorporate it into the batter and the apples. Stir well.
  5. Transfer the batter to a pan lined with parchment paper and bake for 50 minutes at 180°C.
  6. Optionally, drizzle the finished cake with lemon icing to enhance flavour and aroma.
