Cucumber cold soup with feta – recipe
This cucumber cold soup owes its unique taste to the addition of feta cheese. Its salty flavour makes the whole dish more expressive. How to prepare this hit soup for hot weather?
Ingredients:
- 3 large cucumbers
- a spring onion
- two cloves of garlic
- ¼ package of feta cheese
- 2 pints of buttermilk
- a pinch of pepper
Preparation:
Wash the cucumbers, peel them, remove the seeds and cut them into small pieces. Peel and chop the onion and garlic. Put all these ingredients in a blender, pour in cold buttermilk, and blend until you achieve a smooth consistency. You can blend the feta with the rest, cut it into small pieces, and add it to the soup. Season to taste. You can garnish it with mint leaves or pistachios. The cold soup is ready to eat, although it’s best to give it an hour in the fridge to cool and let the ingredients "marry."
