  • 100 grams of icing sugar
  • 75 grams of butter
  • 100 grams of almond flakes
  • 1 teaspoon of vanilla extract

Preparation:

1. Preparing the mix:

Start by melting the butter and setting it aside to cool. Meanwhile, beat the egg whites until stiff peaks form for a fluffy consistency. In another bowl, mix the flour with the icing sugar, then add the vanilla extract. Gradually fold in the beaten egg whites, gently mixing with a spatula to keep the mixture light. Finally, pour in the cooled butter and mix again, then add 75 grams of the almond flakes, gently incorporating them into the mix.

2. Baking the biscuits:

Preheat the oven to 220 degrees Celsius. Spoon small portions of the batter onto a baking sheet lined with parchment paper, keeping some distance between them, as the biscuits will spread into thin rounds as they bake. Sprinkle each portion with almond flakes. Bake for 7–8 minutes, until the edges of the biscuits turn slightly golden.

3. Shaping the biscuits:

If you want to give the biscuits their characteristic tile shape, remove them from the oven and quickly place them over a rolling pin or bottle to achieve a gently curved shape. Leave them to cool—they will hold their unique appearance in this form.
