How do you make scrambled eggs with the ideal consistency? Many people believe that the classic combination of eggs, butter, and seasonings like salt and pepper is sufficient. The secret generally involves gently stirring the eggs. However, celebrated chef Alton Brown offers a different twist on this familiar dish.

A new quality of scrambled eggs

Alton Brown suggests that the key to achieving creamy and moist scrambled eggs is adding an unexpected ingredient. He argues that only a teaspoon of mayonnaise is needed to elevate scrambled eggs to a new level. In his book, "Everyday Cook", published in 2016, he described this innovative approach.

Brown's recipe includes adding a teaspoon of mayonnaise and a splash of water to the eggs in the pan right before they begin to set. He then swiftly mixes these ingredients using a spatula, resulting in a silkier texture for the scrambled eggs.

Don't worry about calories

While some might be concerned about the taste or calorie content of adding mayonnaise, Brown assures that its flavour is almost imperceptible, and the overall calorie count of the dish remains largely unchanged.

If you wish to try this method, simply add a teaspoon of mayonnaise the next time you make scrambled eggs, just before the eggs start to set. It's an easy way to see if the renowned chef's advice holds true.
