If you fancy crispy and juicy nuggets but don't like fast food specials, buy a cauliflower and bake it in a delicious batter. Nuggets in this version win not only in terms of nutrition but also in taste.

Cauliflower is highly versatile. You can transform it into a pizza base, make delicious bread, create a hearty salad, or simply fry it with butter. If you are looking for a quick recipe using cauliflower, definitely try vegetable nuggets.

Cauliflower nuggets can successfully replace meat ones, and before the kids realise they've been slightly deceived, they will have devoured everything on their plates. The advantage of these prepared nuggets is also that they do not drench in oil because they remain crispy and juicy even after baking in the oven.

Cauliflower nuggets: recipe

Ingredients:

  • 1 head of cauliflower,
  • 2 cups of cornflakes,
  • 1 cup of milk or plant-based drink,
  • 2 garlic cloves,
  • 3/4 cup of cornflour,
  • sweet paprika, dried thyme, salt, and pepper.

Preparation:

  1. Divide the cauliflower into florets and steam until slightly tender.
  2. Crush or blend the cornflakes. Then mix them with flour, garlic, spices, and add milk. Stir until a thick batter is formed.
  3. Immerse the cooled cauliflower florets in the prepared batter and then place them on a baking sheet lined with baking paper.
  4. Bake the cauliflower nuggets for 20-30 minutes at 360°F (180°C).
