Carnival salad: A healthy twist with broccoli and turkey
Carnival is a wonderful opportunity to gather with friends. The desserts typical of this period, primarily fritters and doughnuts, are delicious but also high in calories. Therefore, preparing something lighter for the main dish is a good idea. A carnival salad is an ideal choice.
The neighbour highly praised the carnival salad. She mentioned it was quick to make, tasty, and complemented both cold cuts and cheese well - she had plenty of reasons to recommend it. Intrigued, I decided to try her recipe.
Florets, but chopped
The first ingredient of this salad will certainly not surprise anyone. Everyone knows at least a few recipes for salads with broccoli. However, what sets this one apart is that the vegetables are finely chopped. Prepared this way, they combine excellently with other ingredients and the dressing. They also taste fantastic.
Boost immunity
Although broccoli is available all year round, it's during the winter that you should reach for it as often as possible. These vegetables contain vitamins that strengthen the immune system, improve blood circulation, and positively affect the nervous system. The green florets also contain fibre, which supports bowel function, and potassium, essential for regulating blood pressure. An important ingredient is sulforaphane, a sulphur compound with anti-cancer properties. Moreover, broccoli is low in calories. They are perfect for slaws and salads.
Just blanch them
How should you prepare broccoli for the carnival salad? Ideally, in a way that retains their nutritional value and full flavour, which means just blanching. You can do this in two ways: by dropping them into boiling water or steaming them under a lid. After this short treatment, the broccoli will be tender and easy to finely chop. This is exactly what you need for this salad.
Carnival salad
Ingredients:
- 1 pound of broccoli,
- 7 ounces of cooked or grilled turkey breast,
- 5 ounces of feta cheese,
- a few sprigs of dill,
- a few radishes,
- 2 hard-boiled eggs for decoration.
For the dressing:
- 3 tablespoons of olive oil,
- 1 teaspoon of lemon juice,
- half a teaspoon of honey,
- 1 garlic clove,
- salt and pepper to taste.
Preparation method:
- Start by preparing the broccoli. Cut off the florets and submerge them for a few minutes in boiling salted water. Then drain, cool, and chop finely.
- Add finely chopped turkey meat to the prepared broccoli.
- Next, finely chop the feta cheese and grate the radishes.
- Finely chop the dill.
- Combine all the salad ingredients and mix them well.
- Prepare the dressing from the given ingredients by mixing them thoroughly, adding the olive oil last.
- Pour the dressing over the salad. Serve garnished with quarters of hard-boiled egg.
