Burrata and nectarine salad: A summer delight in every bite

Salad with creamy burrata, sweet nectarine, and rocket is a combination that tastes like a warm summer day. It is perfect for a light lunch, a healthy snack, or a quick dinner.

This recipe is ideal if you want to surprise your family and friends with a delicious salad. It is a tasty and healthy change from the classic gyro or the iconic Greek salad. When I put it on the table, everyone was delighted—it is colourful, so it pleases not only the palate but also the eye.

Combining sweet grilled nectarines, creamy burrata, nuts, and rocket creates a unique dish. The pecan nuts add a crunchy texture to the salad, making each bite a perfect balance between sweetness and spiciness, and creaminess and crunchiness. Here, everything just comes together perfectly.

Ingredients:

• 2 tablespoons of butter,
• 3 nectarines,
• 2 ounces of pecan nuts,
• 4 teaspoons of olive oil,
• 2 teaspoons of balsamic vinegar,
• 1 tablespoon of honey,
• 2 burratas,
• 3 ounces of rocket,
• basil leaves,
• chilli flakes - for sprinkling.

Preparation Method:

Step 1. Cut the nectarines into eighths, removing the pit in the middle. Melt the butter on a grill pan or grill plate and place the cut fruit on it. Grill on both sides until they start to brown. You can also do this on a frying pan.

Step 2. Transfer the washed and dried rocket to a large bowl. Arrange the grilled nectarines and the drained burrata on top. Add the pecan nuts and drizzle with olive oil and honey. You can also replace the pecan nuts with walnuts.

Step 3. Finally, drizzle with balsamic vinegar and sprinkle with chilli flakes. The simple burrata and nectarine salad is now ready. Enjoy!
