The aroma of mushrooms, creamy texture, and delicate taste make it a favourite dish for family dinners. But what if you could make it even tastier? Just add one surprising ingredient to turn an ordinary mushroom soup into a culinary hit that everyone at home eagerly awaits.

How to prepare the perfect mushroom soup?

Below you will find a recipe for traditional mushroom soup, enriched with a few key ingredients that give it a unique character.

Ingredients for mushroom soup:

  • 400g mushrooms (set aside a few for decoration),
  • 1 large carrot,
  • 1/2 parsnip,
  • a piece of celery,
  • 1 onion,
  • 400g potatoes,
  • 1 mushroom stock cube,
  • 120ml of double cream,
  • 2 tablespoons butter,
  • 2 tablespoons olive oil,
  • parsley and dill,
  • salt, herbal pepper, allspice, bay leaves,
  • blue cheese (about 100g).

Preparation step by step:

  1. Clean the mushrooms and slice them (leave a few caps for decoration). Cut the root vegetables and potatoes into cubes.
  2. In a heated pan with olive oil and butter, sauté the mushrooms with the onion until they become golden and aromatic.
  3. Transfer the sautéed mushrooms and onion to a pot with about 1.5 litres of water, add the potatoes, carrot, parsnip, celery, and spices (bay leaves, allspice, salt, pepper). Add the stock cube. Cook over medium heat for about 30 minutes.
  4. Mix a few tablespoons of hot soup with the double cream to prevent curdling, then pour it into the pot.
  5. Finally, add grated blue cheese. You can also place a piece of cheese directly on the plate and pour hot soup over it—it will melt, creating a velvety consistency.
  6. Sauté the previously set-aside mushroom caps in butter and use them to decorate the soup portions. Top with freshly chopped parsley and dill.

Mushroom soup with the addition of blue cheese is a true delight for the palate. This simple touch creates an exceptional dish that amazes you and your guests. Don't be afraid to experiment and add your favourite ingredients to the soup.
